The nougat bar production line is specialized equipment for manufacturing nougat bars, enabling automated production from raw material processing to finished product packaging.
Production Process
Ingredient Preparation: Prepare granulated sugar, glucose syrup, honey, egg whites, roasted nuts, dried fruits, and stabilizers. Heat sugar mixtures to 130°C-150°C and whip egg whites to stiff peaks.
Mixing and Cooking: Gradually pour hot syrup into egg white foam while whipping, adding stabilizers to improve elasticity. Precise temperature control prevents graininess or excessive hardness.
Incorporating Additives: Fold roasted nuts, dried fruits, and chocolate chunks into the mixture using modern machinery for even distribution without crushing additives.
Forming and Shaping: Pour viscous nougat mixture into starch-dusted or rice paper-lined molds, using rollers or presses for uniform thickness.
Cooling and Cutting: Cool nougat slabs at controlled humidity for 12-24 hours to prevent cracking, then use automated cutters for retail-ready portions.
Packaging: Use wrapping machines to seal individual pieces or bulk packages, with vacuum sealing options to extend shelf life.
